During the 90s, when I was in the studio with friends, they'd usually set the console faders to -14 dBVU as a default, that was the norm for a 16 channel or 32 channel mixing console. Those same guys told me, keep the instrument output turned up as high as it will go without clipping or sounding otherwise distorted or naff. So i do that with my plugins when I remember to. That is I turn the plugin up within each of them, usually to max, since there's usually no clipping nor distorted output. Then I take ALL the mixer faders down and then finally adjust the fader of the main instrument that I need to adjust. I do it this way to prevent clipping from having all the levels way up too close to 0 dbFS.
Also, I keep a limiter on the master channel by default, which helps a lot. More and more, I'm using a compressor limiter on channels and subgroups which also helps to tame the output/input levels and most VST compressors have a gain control also.
