I'm sorry, the soundcloud link you attached is not a song, it's pure garbage.

However, I do agree with you that having too many instruments is limiting.
For that reason I decided to stop using vsts when writing songs, I only use a Yamaha MODX keyboard or a guitar.
That's it.
When producing I maybe start using vsts and midi, but honestly, I've found out that most of the times you don't need them.
If you can't write/produce a song with one keyboard/guitar, you are a bad songwriter and need to improve.

Just stop using vsts for awhile, dedicate yourself for one instrument and spend hundreds of hours with it, you will be surprised how far you can get with it.

if you buy one keyboard like yamaha montage/modx, and fully commit yourself to master it, you will eventually realize that you don't need to chase endless kontakt libraries and synth vsts like 99% of this forum does.
The yamaha montage/modx already got thousands of topnotch sounds in each category, how many sounds you need in a song?

I also found out that when recording audio tracks I tend to waste less time with piano roll editing and get things done way faster.
Just choose one instrument that cover a wide palette of sounds and don't look back.
